Sweet Potato Breakfast Bowl, and a note on the importance of breakfast

In my experience, there are two distinct types of people - those who love breakfast, and those who hate it. Breakfast happens to be my favorite meal of the day, but I know there's tons of people out there who just really don't vibe with this first meal. And while it's not necessary to force yourself to eat a giant breakfast, our bodies and brains do require some sort of high-quality fuel to begin the day (and no, coffee doesn't count).

In my opinion, breakfast really is the most important meal of the day. This first meal kickstarts our metabolism, stabilizes blood sugar and hormone levels (so key), keeps our mood elevated, supports weight-loss and -maintenance, and energizes + preps the brain for what is sure to be a very full day. Our mornings set the tone for the rest of the day, and this very much includes what we're eating.

And while I personally never tire of breakfast foods - I could (and real talk, oftentimes do) eat breakfast for 3 meals a day - I get that sometimes you can grow bored and uninspired with the seemingly limited options. But with a little creativity, the options are so not limited. Today's recipe is for those of you are over the oatmeal and eggs and avocado toast situations, but still want to get their morning fuel on healthfully and deliciously.

Sweet potatoes are filled to the brim with antioxidants (naturally vibrant colors are always an indication of this), which translates to healthier skin, brains, hearts, and immune systems. They're also high in fiber to keep us feeling full and our blood sugar levels stabilized, and their high carbohydrate content makes sweet potatoes an ideal energy source for beginning the day. I top mine with all the goodies I can find for an extra nutrient boost, but feel free to use whatever you have on hand. And don't be afraid to get a little weird - I swear, the most unlikely combinations are always the yummiest. 

Most importantly, don't give up on breakfast! Our food is important stuff. You just have to find a way to make it work for you.
