Cauliflower, Lime + Cilantro Tortillas

Taco Tuesday is forever my favorite day of the week. I'm a huge fan of Mexican food and am whipping up something southwest-inspired at least once or twice each week. The bold, bright flavors and spices never fail to create a delicious experience, and I'm always down to throw guacamole on anything and everything.

But what I love most is how versatile and healthy the cuisine can be. You may not consider quesadillas and tacos 'healthy', but with a few simple swaps and some beautiful fresh produce, you're looking at a nutrient-rich and seriously soul-satisfying meal. 

And because all good things are built on a solid foundation, we're talking tortillas today. Usually your tortilla options are limited to flour or corn, and neither are super great for you health-wise. Cue the cauliflower. Cauliflower has become this incredibly versatile wonder-child of the wellness world - we’re making it into pizza, using it as ‘rice’, blending the florets in our smoothies, and now we’re turning this cruciferous veggie into the plant-based and paleo-friendly tortilla of your dreams.

I’m partial to using them for tacos (because #tacos), but they’re perfect for quesadillas, breakfast wraps, or on their own toasted and topped with something yummy. ake a batch (or two, because these bad boys are good) at the beginning of the week and I promise they'll be long gone come Friday.
