Taco Tuesday is forever my favorite day of the week. I'm a huge fan of Mexican food and am whipping up something southwest-inspired at least once or twice each week. But what I love most is how versatile and healthy the cuisine can be. You may not consider quesadillas and tacos 'healthy', but with a few simple swaps and some beautiful fresh produce, you're looking at a nutrient-rich and seriously soul-satisfying meal.
And because all good things are built on a solid foundation, we're talking tortillas today. Usually your tortilla options are limited to flour or corn, and neither are super great for you health-wise. Cue the cauliflower.
