A Summer Cool Down How-To: Juice Cubes

Summer is an undeniably magical time of year. The sun generously shines + radiates upon us, creating a collective surge of energy and encouraging us to get outside, get social, get active, and bask in the beauty of the season. It's also hot as hell. 

It's around this time each year, during these long, hot, dog days of summer, that it's most important to nourish your body and mind with hydrating + cooling foods. Lucky for you, I'll be over here working up a sweat to bring you fresh, clean, and delish recipes to help you keep your cool all summer long. 

I've teamed up with the seriously stylish + forever on trend Emily Ravenna of The Hip Suburban to create a summer-inspired and plant-based warm weather treat for you guys. Meet the 'juice cube'. I used some of my seasonal favs to create two deeply hydrating and super fresh flavor variations that will keep both you and your beverage of choice feeling effortlessly cool. And you can sip guilt-free, as the recipes contain only fresh-pressed fruit and veggie juices and absolutely no refined or added sugars. Simply juice your produce, freeze, and enjoy in your bubbles of choice.

We opted for sparkling spring water as an afternoon pick-me-up, and champagne for a happy hour buzz. A mildly-flavored kombucha would also pair perfectly. Cheers, babes!

CUCUMBER SPINACH KIWI

Makes about 3 large cubes

WATERMELON BASIL LIME

Makes about 3 large cubes

*If you don't have a juicer, a blender will work. Simply combine all ingredients into the blender until smooth, and strain through fine mesh cheesecloth to separate the juice from the pulp. Reserve the juice for the cubes, and set aside the pulp.
