Watermelon + Tomato Summer Gazpacho

I know I've been talking all things summer lately on the blog, but I'm truly having a love affair with the season. If you have yet to notice, the Solful Health blog is inherently sun-inspired and summer-focused. And in true summer fashion, watermelon has been a staple in my kitchen. So naturally sweet, deeply hydrating, and surprisingly versatile.

In an attempt to stay perpetually cool, I've been avoiding cooking as much as possible. As the temperatures rise, our bodies begin to crave cooler, more water-rich foods to balance out. Cue chilled gazpacho. This recipe was made or summer. Pairing sweet summer melon with savory tomatoes, hydrating cucumber, and flavorful basil, this seasonal update on classic gazpacho is the perfect way to highlight summer's freshest produce. It's also raw, vegan, paleo, gluten free (etc., etc.) if that's your jam, and takes like 10 minutes to throw together!
